Jamun


Jamun tree is commonly found in New Delhi and surrounding areas. This tree is in Noida. There are no fruits in it. Bought the Jamun fruits from a vendor near the tree.
I also saw one in Miami. Jamun Tree in front of this Burger King.

Avocado Smoothie



Ingredients:
Avocado - 1
Litchi juice - 1/2 cup
Plain yogurt - 1/2 cup
Honey - 1 tbsp.
Sugar - 3 tsp.
Ice cubes - 4

Method:
Scoop out the flesh of the avocado and add in a blender.
Combine all the other ingredients in the blender and of course you what to do with a blender.
After blending, pour the smoothie in a glass and refrigerate for 2 hours.
Serve chilled and enjoy.

Watermelon Payasam/Kheer

Watermelon Payasam/Kheer






Ingredients:
Watermelon flesh - 3 cups (chopped)
Milk - 1 cup
Sweetened condensed milk - 1 cup
Cardamom seeds - from 2 cardamoms
Cashew nuts - 5 (whole)
Saffron strands - a pinch
Ghee - 1 tsp.

Method:
Boil the milk and keep aside.
Grind the watermelon.
Fry the nuts in ghee till golden color.
Crush the cardamom seeds.
Combine all ingredients and payasam/kheer is ready.
Enjoy (you can either eat/drink as it is or chilled).

Orange Rasam



















Ingredients:

Orange juice (fresh) - 1 cup
Green chilies - 2 (slit)
Garlic -2 big cloves (crushed)
Dal water - 2 ladles
Water - 3 cups
Rasam powder - 1 ½ tsp.
Turmeric powder - 2 pinches
Tomato - 1 (big)
Asafetida - 1 pinch
Curry leaves - 1 sprig
Coriander leaves - 2 tbsp.
Salt (to taste)
Oil
Mustard seeds - ½ tsp.
Cumin seeds - ¼ tsp.
Urad dal - ½ tsp.

Method:
Crush the tomatoes with clean hands in 1 cup of water.
Add turmeric powder, 2 cups of water, dal water, curry leaves ,salt & rasam powder and mix well.
Heat oil in a pan and add the mustard seeds, cumin seeds, asafetida and urad dal.
When mustard seeds splutter, add the green chilies and garlic. Sauté.
Add the rasam water.
When the bubbles appear on top of the rasam, remove from heat and add the orange juice.
Sprinkle with coriander leaves.
Serve immediately.

Note:
You can drink the rasam like soup.
It has a sweeter taste.
Instead of garlic, ginger can be used.

Avocado Ice-cream





Ingredients:
Avocado - 2 small (Yielded ¾ cup)
Sugar - 1 cup (or) as per taste
Whole milk - ¾ cup
Heavy cream - 200 ml
Vanilla extract - few drops





















Method:
Deseed and scoop out the flesh of avocado.
Add avocado, sugar, milk in blender and blend.
Make sure sugar dissolves :) .
Combine the cream and vanilla extract.
Freeze them in a covered plastic container or any other container.
Whisk vigorously every hour for 4 to 5 times till the ice cream is set well.
Enjoy!!!!

Strawberry & Pineapple Smoothie






































Ingredients:
Strawberry - 1 cup
Pine apple - 1 cup
Coconut milk - 1 cup
Dates syrup - 2 tbsp.
Ice cubes - 5

Method:
Throw all the ingredients in a blender and blend.
Pour the smoothie in a tall glass and drink.

Orange and Sugarcane Juice





































Ingredients:
Orange juice - 1 cup
Sugarcane juice - 1 cup
Mint leaves - 10 (small)
Lemon juice - from half-sliced lime
Black salt - 1/4 tsp.
Chat masala (optional)

Method:
Crush mint leaves and add to the orange, sugarcane and lemon juices.
Now add the black salt and mix well.
Strain the juice.
Now sprinkle chat masala and Enjoy.

Mosambi Juice


Mosambi is also known as 'Sathukudi' in Tamil. This fruit contain a lot of Vitamin C and Iron

Ingredients:
Mosambi - 5 (medium)
Mint leaves - 5 to 6 leaves
Cumin powder - 2 pinches
Pepper powder - 2 pinches
Black salt - 1/4 tsp
Water - 1/2 cup
Sugar as per taste (optional)

Method:
Squeeze the juice from mosambi in hand juicer or electric juicer.
Cut the mint leaves or crush them.
Add the mint leaves, black salt, cumin powder, pepper powder & water in the juice.
Mix well and drink.

Healthy Yum-Yums!

Whole Wheat Sandwiches

You may add any kind of stuffing for the sandwiches. My stuffings are lettuce, swiss cheese slice, sliced tomatoes, pickled sandwich cucumber, pickled sliced Jalapeños (in left side plate). Same stuffing with broccoli sprouts.

Fruit Kebabs
You may add any variety of seasonal fruit of your own choice. In the picture, the fruits are papaya, mango, golden apples, chikoo, strawberries, pineapples. Any flavored yogurt would do as a dipping sauce. In the picture, it's vanilla and cherry yogurt.

Yogurt Parfait & Pineapple Dessert

Yogurt parfait

How to concoct parfait:
Ingredients-Plain yogurt (or flavored yogurt), slices of pineapple, slice of strawberries, spoons of granola.
Method-At the bottom of the glass, include spoons of yogurt, then slices of strawberry, yogurt, and slices of pineapple, yogurt, strawberry, yogurt, pineapple and finally sprinkle granolas. You can also add your relished fruits.

Pineapple dessert

This recipe was acquainted by my friend. This is a straightforward dessert, not even 5 minutes to prepare this.
Take 1 cup of condensed milk, 1 cup of pineapple chunks (canned -without juice), and 1 cup cool whip.
Mix all the ingredients and chill. Enhance with preferred nuts and serve.

Fruit Juice and Nostalgia

Pachadi - பச்சடி
One of the childhood adventures was to climb on the branches of the mango trees and jump off them where the altitude was very low. As we didn’t have steps to the open terrace, I used to climb on the ladder and reach the terrace pick the mangoes straight from the tree. There were 4 varieties of mango trees in my garden. I just remember one name ---…neelam. Others I don’t remember. One variety was meant for pickles. I was really scared of the weaver ants (à®®ுசுடு - 'musudu' in my language) roaming on the tree branches and building nests with mango leaves. Nowadays whenever I see the mango trees I always remember my childhood and mischievous acts. Let’s see the recipe: For this pachadi, mango should be sweet and sour. But I made this pachadi with whatever type of mango I got in the store.

Ingredients:
Mango – 1
Red chilli powder – ½ teaspoon
Turmeric powder – 1 pinch
Mustard seeds – 1/2 teaspoon
Fenugreek seeds – 5 seeds (I didn’t add)
Salt
Oil, Jaggery – small piece (crush into powder),Curry leaves few

Method:
Cut the mangoes into small piece (some may like to add the seed also).
Heat the oil in the kadai.
Add mustard seeds and allow it to crackle.
Then add the mango pieces and sauté.
Then add the red chilli powder, turmeric powder and salt.
Add ½ cup of water.
When the pieces become tender add the jaggery powder and mix.

Buttermilk (à®®ோà®°்) :I remember thanneer pandhal which has both water and neer morr in earthen pots. Whenever I return back from school in a bicycle, I used to count by how many houses have kept thanneer pandhal. In some houses people will sit beside to give the drinks with a warm smile. Other places, no persons to attend. In some places, there won’t be any pots but only the pandhals are available. At my house, when relatives arrive, the first thing they get is morr. As we lived in tropical climate, only experience can tell how the one feels after having morr. No ice is added. It is just the earthen pot made from the pottery wheel. The magic is that the teeny tiny pores of the pot let some moisture of the contents to escape and in turn making it cool on the outside part protecting the morr from heat. This is a natural cooling process. Ah, science…
The way to make à®®ோà®°் as I know is, to crush green chillies, curry leaves, ginger and add to butter milk with salt.

Strawberry Smoothie








I had plenty of strawberries in my back yard (in the last night's dream........hmmm!!! deep breath). I love the color of strawberry with green leaves combo.


Ingredients:
Strawberry – 10

Banana (frozen) – 1
Fresh orange juice – squeezed from one fruit
Vanilla flavored low fat yogurt – 2 tablespoon
Ice as required.

Method:
Toss the strawberries and frozen banana in a blender and blend.
Then add the orange juice, vanilla yogurt and ice.
Blend till smooth.
Pour it in a tall glass and have a healthy drink!

Cantaloupe Smoothies

Just be sure that all fruits are ripe before making a smoothie!!!
Cantaloupe. It has Vitamin C.

Ingredients:
Cantaloupe - half fruit
Frozen banana (peeled) - 1

Method:
Cut the fruits into pieces.
Throw them in the blender.
Blend till smooth!

Here is another type of smoothie.
Use half fruit Cantaloupe, one frozen banana, 1/2 cup plain yogurt, ice and little honey. Blend them all and you will have a great drink!

Water Melon Smoothie


This was a breakfast on a Sunday.

Ingredients:
Water Melon - ½ fruit
Vanilla Low Fat Yoghurt - ½ cup
Ice - as required.


Method:
Toss in everything in the blender and blend until smooth!

Strawberry Lemonade

Strawberry lemonade

Ingredients:
Fresh ripe strawberries - 20 pieces
Lemon juice - squeezed from one lemon
Water - 1 1/2 cup
Sugar - 3 tablespoon or according to your taste

Method:
Add ripe strawberries, lemon juice , sugar and 1/2 cup water in a blender and blend well.
Add remaining 1 cup of water and again blend well.
Voilà. Drop few ice cubes and serve.

Note: Add water according to the sourness of lemon juice.

Strawberry salad

Since Valentine's Day is coming up, we're preparing for it with a strawberry mania. The strawberry salad you see below took a while for designing but thankfully, my daughter helped me design this.

Ingredients for Salad:

Fresh strawberries sliced - 1/2 cup
Fresh baby spinach - 1 cup (chopped)
Almonds - 2 tablespoon (sliced)
Cider vinegar - 1/2 tablespoon
Honey - 1/2 tablespoon
Sugar - 1/2 teaspoon

Salad preparation Method:
In a salad bowl, combine the spinach, strawberries and almonds.
Combine vinegar, honey and sugar in a jar with a tight lid.
Shake well.
Sprinkle over salad and toss.

Healthy Fruit Salad

Ingredients:
Apple
Mango
Orange
Kiwi fruit

Method:
The picture below will give the idea.


p.s. To reduce oxidation in apple, dip in diluted lime juice (1 part of lime juice with 3 parts of water) and then mix with fruits.

Red Health Salad

Ingredients:
Mix of Fruits

Method:
Cut the fruits into likable shapes and toss together in a bowl.
Enjoy the salad.
p.s. In this salad, I used water melon, cantaloupe, red grapes, and black grapes. I used melon scooper to make half ball shaped water melons and cantaloupes.
