Microwave Chocolate Thirati Paal (T&T) - Priya's Easy N Tasty Recipes

Ingredients:
Sweetened condensed milk - 1 can (400gms)
Yogurt- 3 tbsp.
Ghee - 1 tbsp.
Dark chocolate powder - 2 tbsp.
Nuts of your choice for garnishing



Method:
In a microwave safe bowl, add condensed milk, yogurt, ghee and dark chocolate powder and mix well.
Microwave high for 10-12 minutes or according to your oven power. Stir every 3 minutes and continue cooking.
Remove and add in a bowl. Garnish with chopped nuts.
Enjoy!

Dal Palak (Microwave Version)



Ingredients:
Moong Dal - 1/2 cup
Palak/spinach - 1/2 from a medium bunch
Onion - 2 (chopped)
Ginger - 1.5 tsp.
Tomatoes - 2 (chopped)
Green chillies - 3 (slit)
Cumin powder - 1/2 tsp.
Turmeric powder - 1 pinch
Salt (to taste)
Oil - 2 tsp.
Coriander leaves - 4 tbsp. (chopped)

For tempering:
Mustard seeds - 1 tsp.
Cumin seeds - 1 tsp.
Asafoetida - 1 pinch

Method:
Soak moong dal with 1 cup of water for 2 hours.
Add this moong dal with water in a microwave proof dish (I used corningware).
Cook micro high for 10 to 12 minutes.
Stir in between for every 2 to 3 minutes.
After sometime while cooking water dries up, so add little water and conitnue to cook.
Once the dal is cooked (that is after 12 minutes), remove from microwave and keep the dal aside.
In another microwave bowl add oil, onions, green chillies, ginger and micro high for 2 minutes. Stir.
Add tomatoes, chopped spinach and micro high for 2 minutes. Stir.
Add this green mixture to the dal, and also add salt, turmeric powder, coriander leaves, cumin powder and if required add water.
Micro high for 4 to 6 minutes stirring in between.
Remove and keep aside.
In a micrwave bowl, add oil and do the tempering for a minute.
Add this tempering to the dal plalak.
Enjoy with roti or with plain rice.

Pumpkin Pulao (Microwave Version)

 

Ingredients:
Basmati rice - 1 1/4 cup
Yellow Pumpkin - 3/4 cup (chopped)
Carrots (big) - 1 (grated)
Sprouted green gram - 2 tsp.
Sprouted fenugreek seeds - 1 tsp.
Cumin seeds - 1 tsp.
Green cardamom - 2
Cloves - 4
Cinnamon (1 inch) - 2
Green chilies - 4
Ginger - 1 inch
Salt (to taste)
Oil
Onions - 2 (thinly sliced)






Method:
Wash basmati rice for 4-5 times and soak in water for 45 minutes.
Grind green chilies and ginger and keep aside.
Add oil, onions, cumin seeds. cardamom, cloves and cinnamon in a microwave-safe dish.
Microwave high for 4 minutes by stirring in between.
When the onions change color add ground chilies and ginger.
Microwave high for a minute.
Add pumpkins, sprouted fenugreek, carrot and green grams and microwave high for 2 minutes and stir.
Discard the water and add the rice and salt.
Add 2 1/4 cups of water and close the dish with a microwave-safe lid partially with a small gap on one side.
Microwave high for 10 minutes.
Stir gently and microwave low for 15-19 minutes or until the rice is cooked.
After 3 minutes, mix so gently that the fragile rice shouldn't be broken.
Enjoy with your favorite raita.

Eggless Marble Cake (Microwave Version)

Ingredients:
Flour - 1 cup
Sugar (powdered) - 1/2 cup (or as per taste)
Milk - 3/4 cup
Butter - 3 tbsp.
Baking powder - 1 1/2 tsp.
Cocoa powder - 3/4 tbsp.
Drinking chocolate powder - 1 tbsp.
Vanilla essence - 1/2 tsp.
Butter - 1 3/4 to 2 tbsp. (to melt chocolates)



Method:
Sieve flour and baking powder together 4 times.
Cream sugar and 3 tbsp of butter till they turn light and fluffy.
Add lukewarm milk, flour gradually and mix with a electric hand-mixer.
Combine the vanilla essence.
In another microwave bowl, add butter and melt butter on microwave high for 30 seconds.
Mix cocoa and drinking chocolate with melted butter.
Pour quarter batter in a micro container and on the top add 1 tbsp. of chocolate mix.
Again add little batter, chocolate mix and continue the process till you finish the batter and the choco mix.
Roughly mix with the help of a tooth pick.
Micro high for 5 minutes.
Let it stand in microwave for another 5 minutes (no cooking).
Remove the container and let it rest for 5 minutes.
Enjoy the cake immediately, as the cake dries fast.
Note: Butter the container before pouring the batter.

Carrot Halwa with Nuts (Microwave Version)



Ingredients:
Carrots - 400 gm (grated)
Fresh cream - 400 gm
Sugar - 3/4 cup
Cahewnuts and almonds - 1/4 cup (mixed)
Ground green cardamoms - 1 tsp.
Almonds and pistachios - 2 tsp. (chopped)


Method:
Take carrot, cream and sugar in a casserole. Microwave high for 5 minutes. Stir in between.
Now microwave high for 20 minutes by stirring in between every 3 to 4 minutes until liquid is almost evaporated.
Blanch almonds and chop both almonds and cashewnuts.
Add the nuts and ground cardamom. Microwave medium for 4 minutes.
Take out and spread out in a serving plate.
Garnish with chopped almonds and pistachios.
Serve warm or chilled.

Palak Paneer (Microwave Version)

Ingredients:

Spinach/palak - 1 bunch (medium)
Paneer - 200 gm (cubed)
Green chilies - 3 (chopped)
Ginger - 1 tsp. (grated)
Onion - ½ cup (chopped)
Salt
Oil
Cumin powder - 1 tsp.
Coriander powder - 1 tsp.
Turmeric powder - ¼ tsp.
Garam masala - ½ tsp.
Water - ¼ cup (I didn’t add)
Cream - 2 tbsp.

Method:
In a microwave safe bowl, add the spinach and green chilies. Microwave high for 1 ½ minutes (mine took 4 minutes).
Cool completely and puree them.
Meanwhile in another bowl, add oil, onion and ginger. Toss them so that the oil gets coated well.
Microwave in high mode for 2 minutes. Coarsely grind them.
Now add the ground coarse paste of onions, ginger, green chilies, spinach, cumin powder, cream (I didn’t measure, just poured it). Coriander powder, turmeric powder, garam masala, water (if required), salt in the bowl and mix well.
Microwave for 3 minutes (remove and mix well after 2 minutes).
Add the paneer and microwave for a minute.
Enjoy this yummy & healthy palak paneer with naan or roti.
