Garlic Rasam

Rasam is one of the everyday lunch or dinner item in Tamil families. I am a big fan of rasam. When I think back of my child hood, rasam was my entrée with the rice, rather than sambar. I still remember how my mom goes about making her rasam. In my mom's home, we have the "ammi". She would crush the garlic in ammi without peeling the outer layers of garlic. After they are crushed, the garlic would leave out the peels on their own. Then cumin seeds and black peppercorns are crushed separately. She would pick up red tomatoes (desi version) and crush with her hands inside a bowl. She would pick curry leaves from the tree at the backyard of our house to add in the rasam. When the rasam is being cooked, the aroma wafts through the house making us hungry. I am sure, my daughter will recall these memories similarly. :)

Ingredients:
For rasam:

Garlic - 2 bulbs (with small pods)
Tomatoes - 2 big ones and a small one :D
Mustard seeds - 1 tsp.
Dry red chillies - 2
Curry leaves - few
Salt (to taste)
Oil
Coriander leaves - few
Rasam powder - 2 tsp.
Turmeric powder - 1/4 tsp.
Tamarind water - 2 tbsp.
Boiled toor dal - 1/2 cup (with water)

For rasam powder:
Peppercorn - 1/2 tsp.
Roasted and powder cumin - 1 tsp.
Arhar dal - 1 tsp.
Chana dal - 1/2 tsp.
Fenugreek seeds - 4
Coriander powder - 1/2 tsp.
Asafoetida - 1/4 pinch
Dry red chillies - 2 (or as per taste)
Oil



Method:
For rasam powder:
Dry roast peppercorns, fenugreek seeds and asafoetida for 2 minutes.
Fry chana dal, arhar dal and red chillies in little oil till dals turn golden in colour.
Powder all the ingredients and keep aside.

For rasam:
Make a + cut on the top of the tomatoes and boil them.
When the tomatoes are warm, peel the skin and grind the tomatoes into paste.
In a bowl, combine boiled dal, tomato paste, tomato water (if any left), turmeric powder, salt, tamarind water and rasam powder and mix well.
Now pour required water in this mixture and keep aside.
Heat a sauce pan and add oil.
Throw in the mustard seeds and allow it to crackle.
Add the peeled garlic and saute for 2 minutes.
Break the red chillies into halves and saute.
Pour the rasam and cook in low-flame.
When foam forms on the top of the rasam, add coriander and curry leaves.
Remove and enjoy with rice or drink.

Ginger Rasam (Version 2.0)



Ingredients:
Cumin seeds - 1 1/2 tsp.
Peppercorn - 3/4 tsp.
Coriander seeds - 1 tsp.
Tuvar dal/Arhar dal - 1 tsp.
Ginger - 1 inch
Dry red chilli - 2
Tomatoes - 2
Mustard seeds + Cumin seeds - 3/4 tsp.
Curry leaves -few
Boiled & mashed dal - 1/2 cup
Tamarind - gooseberry size
Corinader leaves - few (chopped)
Salt (to taste)
Turmeric powder - 1/4 tsp.
Asafoetidas - 2 pinches
Oil - 2 tsp.

Method:
Soak the tamarind in 1 cup of water. Make a '+' on top of the tomatoes.
Add 2 cups of water. Cover and boil. When the tomatoes are tender, remove from heat and keep aside.
Cool slightly. Peel tomatoes (if desired) and grind them.
Squeeze out the tamarind juice.
Dry roast the cumin seeds,  coriander seeds, peppercorn and arhar dal.
Grind them with 1/2 inch of ginger.
Heat the oil in a pan and temper the mustard+cumin seeds and red chilli.
Combine the tamarind extract, tomato paste, tomato juice, mashed dal, turmeric powder and salt.
If required, add an extra amount of water.
Pour this in the pan. Add the rasam powder, curry leaves and asafoetida and mix.
When the rasam forms a frothy layer on the top, remove from heat.
Chop the remaining half inch of ginger and sprinkle on the top of the rasam along with coriander, curry leaves.

Methi Leaves Rasam (T&T) - Priya's Easy N Tasty Recipes

This rasam is very healthy and unique as it contains methi. I didn't chop the fenugreek leaves for I was afraid that my fussy kids would not drink them. However, when I made enough amount of this rasam for lunch, the cauldron (not exactly, I actually meant the sauce pan and I'm just using this word for exaggeration) was simply empty, empty, EMPTY!!! Not even a single drop was left and the vessel was perfectly clean. I had prepared the rasam not only for lunch but also for dinner :'-(. Thanks, Priya.

Ingredients:
Methi/fenugreek leaves - 1 cup
Tomato - 1 (crushed)
Garlic - 2 cloves (crushed)
Home-made rasam powder (recipe below) - as required
Lemon juice - from a lemon
Dal water - 1 cup (1/2 cup boiled dal + 1/2 cup dal water)
Water - 2 to 3 cups or as required
Mustard seeds - 1/2 tsp.
Cumin seeds - 1/2 tsp.
Whole dry red chillies - 2
Asafoetida - a pinch
Coriander leaves - chopped few
Salt (to taste)
Oil

Method:
In a bowl add dal water, crushed tomato, crushed garlic, water, salt (to taste) and rasam powder.
Heat oil and add mustard and cumin seeds. When the seeds splutter, add red chillies and asafoetida. Fry for a few seconds. Add the fenugreek leaves and saute till they are tender. Now add the dal water mixture and let it cook till it forms foam on top of the rasam.
Simmer for 2 minutes. Add lemon juice and coriander leaves. Remove from heat.
Serve immediately with hot rice.

Home Made rasam powder

Ingredients:
Toor/Arhar dal - 1 tsp.
Coriander seeds - 1.5 tsp.
Channa dal - 1 tsp.
Cumin seeds - 1/2 tsp.
Black peppercorns - 1/2 tsp.
Fenugreek seeds - 4
Dry red chillies  - 2
Curry leaves - 5
Turmeric powder - a pinch

Method:
Dry roast all the ingredients separately except turmeric powder. Cool and powder them. Mix the turmeric powder. Use the powder with the rasams.

Mysore Rasam



Ingredients:
Arhar/Toor dal - 1/2 cup (boiled & mashed)
Tamarind - gooseberry size
Salt (to taste)
Turmeric powder - 2 pinches
Asafoetida powder - a pinch
Coriander seeds - 1 tbsp.
Whole dry chillies - 4
Cumin seeds - 1 tsp.
Black peppercorns -1/2 to 3/4 tsp.
Coconut pieces - 1.5 tbsp.
Oil
Ghee
Mustard seeds - 1/2 tsp.
Curry leaves - 1 sprig
Coriander leaves - 2 tbsp. (chopped)



Method:
1. Soak tamarind in required water for a few minutes. Strain the tamarind to get tamarind water.
2. In a pan add tamarind water, salt and asafoetida and bring to a boil. Boil till the raw smell fades away.
3. Meanwhile in a small pan, heat oil and roast the coriander seeds, red chillies, cumin seeds and peppercorns.
Grind into a paste along with coconut pieces by adding little water.
4. Add the ground paste, turmeric powder to the tamarind water. Stir.
5. After 2 to 3 minutes, add the mashed dal and required water. When the rasam starts to boil, (when the foam/froth appears on the top of rasam) remove from heat.
6. In a small pan, heat ghee and splutter the mustard seeds and curry leaves. Pour this on the rasam. Add the coriander leaves and enjoy with white rice.

Sprouted Horse Gram/Kollu Rasam


Ingredients:
Sprouted horse gram - 1 cup
Tamarind water - 1/2 cup
Green chilli (small) - 4 (slit)
Garlic - 3 cloves (peeled and crushed)
Tomato - 1 (chopped)
Turmeric powder - 1/4 tsp.
Salt (to taste)
Coriander seeds - 2 tsp.
Cumin seeds - 1 tsp.
Peppercorn - 1 tsp.
Fenugreek seeds - 1/2 tsp.
Asafoetida powder - 2 pinches
Curry leaves - 2 sprigs
Mustard seeds - 1 tsp.
Coriander leaves - 2 tbsp. (chopped)
Oil

Method:
Pressure cook horse gram with required water. Strain the horse gram. I prepared curry with horse gram. I got 2 cups of horse gram water. Keep aside. Dry roast coriander seeds and fenugreek seeds. Powder them with cumin seeds and peppercorn. Heat oil in a pan and add mustard seeds, asafoetida, garlic and green chillies. Saute garlic till it changes to golden color. Now add the tomato pieces and salt and saute. Add the rasam powder and pour the tamarind water. Add turmeric powder and curry leaves. Boil the water till the raw smell fades. Now add the horse gram water and bring it to a boil. Remove from heat and add the coriander leaves. Serve with rice or drink.

Orange Rasam



















Ingredients:

Orange juice (fresh) - 1 cup
Green chilies - 2 (slit)
Garlic -2 big cloves (crushed)
Dal water - 2 ladles
Water - 3 cups
Rasam powder - 1 ½ tsp.
Turmeric powder - 2 pinches
Tomato - 1 (big)
Asafetida - 1 pinch
Curry leaves - 1 sprig
Coriander leaves - 2 tbsp.
Salt (to taste)
Oil
Mustard seeds - ½ tsp.
Cumin seeds - ¼ tsp.
Urad dal - ½ tsp.

Method:
Crush the tomatoes with clean hands in 1 cup of water.
Add turmeric powder, 2 cups of water, dal water, curry leaves ,salt & rasam powder and mix well.
Heat oil in a pan and add the mustard seeds, cumin seeds, asafetida and urad dal.
When mustard seeds splutter, add the green chilies and garlic. Sauté.
Add the rasam water.
When the bubbles appear on top of the rasam, remove from heat and add the orange juice.
Sprinkle with coriander leaves.
Serve immediately.

Note:
You can drink the rasam like soup.
It has a sweeter taste.
Instead of garlic, ginger can be used.

Pepper Rasam





















My mom makes this rasam very thick by adding coarsely ground garlic, pepper and cumin seeds. It’s a good medicinal drink for cold and sore throat. It’s better to keep a hand kerchief nearby due to certain circumstances :) while drinking rasam. For those who have stomach ulcer, please don’t drink the rasam.


Ingredients:
Tamarind - lime size
Pepper - 2 tsp.
Cumin seeds - 1 tsp.
Garlic - 2 cloves (big)
Dry whole red chili - 1
Tomatoes - 1
Curry leaves - 1 sprig
Turmeric powder - a pinch
Asafetida - ¼ pinch
Salt (to taste)
Coriander leaves - 1 tbsp. (chopped)
Mustard seeds - ¼ tsp.
Oil

Method:
Soak the tamarind in one cup of warm water.
Crush or powder the pepper and cumin seeds.
In a bowl add the tamarind extract and crush the tomatoes.
Add 2 cups of water , turmeric powder, curry leaves, salt, pepper and cumin powder & asafetida.
Heat oil and the mustard seeds.
Allow to crackle and add the garlic and sauté till light golden color.
Add the broken dry chilies. And add the rasam water.
Bring it to a rolling boil. Let it boil for 2-4 minutes.
Add the coriander leaves.
You can drink it like a soup or have it with white rice.

Tomato Rasam
























The Rasam

Ingredients:
Tomatoes - 4 (ripe & medium-sized)
Tuvar dal - ¼ cup
Rasam powder - 1 tsp.
Garlic (big) - 4 cloves (crushed)
Green chilies - 2 (slit into halves)
Mustard seeds - 1 tsp.
Salt
Oil
Curry leaves - 2 sprigs
Coriander leaves (chopped) - 2 tbsp.
Turmeric powder - ¼ tsp.

Method:
Boil the tomatoes and peel the skin. Puree  the tomatoes after peeling.
Boil the dal and keep aside.
In a bowl, mix tomato puree, water and boiled & mashed dal along with its water, salt, turmeric powder.
Heat the oil and add the mustard seeds. Allow them to crackle.
Add green chilies and garlic & sauté for 2 minutes.
Pour the rasam mixture.
Now add the rasam powder and curry leaves.
Let it cook in a medium-flame.
When there is an arising of foam, switch off the stove (don’t allow to boil).
Now add the coriander leaves and enjoy the rasam.


Rasam Powder
Ingredients:
Tuvar dal - 1 tsp.
Chana dal - ½ tsp.
Cumin seeds - ½ tsp.
Pepper - ¼ tsp.
Whole dry red chilies - 2
Coriander seeds - ¼ tsp.
Fenugreek seeds - ¼ tsp.
Asafetida - 2 pinches
Oil - ¼ tsp.

Method:
Dry roast the cumin seeds, pepper, fenugreek seeds and asafetida.
Fry tuvar dal, chana dal, coriander seeds, red chilies in ¼ tsp. of oil.
Let both of the mixtures cool.
After cooling, grind the spices together.

Beet Rasam (Tried and Tasted)


Madhuram's Eggless Cooking is a wonderful website with varities of recipes. I tried this beetroot rasam from her website which turned out really tasty and goluptious! Here is the original recipe.


Ingredients:
Filtrate of beetroot in boiled water - 2 cups
Tamarind - 2 teaspoons (or sour tomatoes)
Arhar dal water - 2 ladles
Salt (to taste)
Turmeric powder - 1/2 teaspoon
Oil
Dry Red chillies - 1 (cut into half)
Mustard seeds - 1/4 tsp
Cumin seeds - 1 tsp
Garlic cloves - 2

Method:
In a vessel combine the beet water, crushed tomatoes (I used ripe tomatoes), salt and turmeric powder.
Let it boil.
Meanwhile in a small frying pan, heat the oil.
Add the mustard seeds and cumin seeds.
When the mustard seeds crackle, add the chilli and garlic.
Saute till the raw smell fades away.
While the mixture is boiling, add the dal water and the tempering.
Let it boil for 3 minutes.
Garnish with coriander leaves.



As for the beetroots I boiled for the rasam, I used it to make a poriyal out of it.

Ingredients:
Beet root - 1 (big and cooked)
Cumin seeds - 1/4 teaspoon
Dry red chillies - 2 (each cut into half)
Mustard seeds - 1/4 tsp
Urad dal - 1/4 tsp
Channa dal - 1/2 tsp
Salt (to taste)
Grated coconut - 2 tbsp
Oil (for tempering)


Method:
Heat the oil in a pan.
Add the mustard, cumin, urad dal and channa dal.
When the mustard seeds crackle, add the red chillies and fry .
Add the beets and saute.
Now add the salt, grated coconut and mix well.
Poriyal is ready.

Ginger Rasam - இஞ்சி ரசம்

Ginger rasam இஞ்சி ரசம்



Ingredients:
¼ cup Red Gram துவரம் பருப்பு अरहर की दाल
key lime size Tamarind புளி इमली
1 teaspoon Peppercorns à®®ிளகு काली मिर्च
1 teaspoon Cumin Seeds சீரகம் जीरा
¼ teaspoon Turmeric Powder மஞ்சள் தூள் हल्दी
2 Whole Red Chilis வர à®®ிளகாய் लाल मिर्ची
2 Tomatoes தக்காளி टमाटर
1 inch long Fresh Ginger இஞ்சி अद्रक
As needed Salt உப்பு नमक
Oil எண்ணெய் तेल
2 teaspoons (Chopped) Curry Leaves கறிவேப்பிலை करी पत्ता
2 teaspoons (Chopped) Coriander Leaves கொத்தமல்லி தழை धनिया
¼ teaspoon Mustard seeds கடுகு सरसों
¼ teaspoon Black gram வெள்ளை உளுத்தம் பருப்பு urad दाल
2 pinch Asafoetida பெà®°ுà®™்காயம் हींग


Method:
Soak the tamarind in one cup of warm water.
Boil the red gram.
Grind cumin seeds and peppercorns coarsely in spice grinder.
Heat oil in a saucepan.
To the oil add mustards seeds and black gram and allow it to crackle.
Then add whole red chili. Stir.
Add the chopped tomatoes and sauté.
Crush the tamarind thoroughly which is soaking in the water along with the water. Using a strainer get the tamarind paste. Add this into saucepan.
Add another 1 cup of warm water.
Add turmeric powder, cumin, pepper coarse powder, salt, and curry leaves.
Bring it to boil.
Add the boiled dal and coriander leaves.
Turn off the flame after 5 minutes.
Add the grated ginger and garnish with ginger juliennes.
After 5 to 10 minutes serve with rice or drink it.

Note: You can also use just the juice from ginger, instead of grated ginger.

Lemon Rasam


Ingredients:
Lemon -1
Tomato -1
Tuvar dal - 4 tablespoons
Green chillies - 3 ( small)
Rasam powder - 1 teaspoon
Asafoetida - 1/4 teaspoon
Oil - 2 teaspoon
Curry leaves - 1sprig
Coriander leaves - 1/4 bunch
Mustard seeds - 1/4 teaspoon
Salt to taste
Water - 4 cups
Turmeric - 1/4 teaspoon

Method:
Boil the tuvar dal in required water.
Take 4 cups of water in a saucepan.
Add turmeric powder, salt, asafoetida and let the water boil.
Add slit green chillies.
In a bowl crush the tomato with hands in little water.
Pour this crushed tomato to the boiling water.
Add the rasam powder.
Add the boiled tuvar dal and mix.
When the rasam starts to bubble add coriander leaves and remove from the fire.
Heat oil in a small kadai. Add the mustard seeds and curry leaves. When it starts to crackle pour this seasoning in to rasam.
Take juice from the lemon and add this juice while serving.
If you add the lemon juice earlier the rasam will taste bitter.

Making the Rasam powder:
Ingredients:
Whole red chillies - 3
Coriander powder - 2 teaspoon
Fenugreek seed - 1/4 tsp
Black Pepper - 1/2 teaspoon
Cumin seeds - 1/2 teaspoon
Tuvar dal - 1/2 teaspoon
Asafoetida - 1/4 teaspoon

Method:
In a small kadai dry roast each ingredients separately in low flame except asafoetida.
When the ingredients are cool, grind them all in a spice grinder.
From this rasam powder add 1 teaspoon powder to the rasam.
